Orange Bran Muffins

Bran muffins are chock-ful of fiber and whole grains, but the kids often ask for something different. Here’s a new spin on an old standard.

Orange Bran Muffins

In a large mixing bowl, combine:

  • 2 cups All Bran Cereal
  • 3 tbsp dark molasses
  • 1/2 cup orange juice
  • 3/4 cup very hot water

Allow to completely dissolve and then add:

  • 1 egg
  • 4 tbsp oil
  • 1/4 cup low fat vanilla yogurt

Blend and add:

  • 3/4 cup whole wheat flour
  • 3/4 unbleached flour
  • 1 tbsp. baking soda
  • 1/2 tsp salt
  • 1 tbsp Sweet Seasoning (blend of cinnamon, allspice, nutmeg, cloves, and ginger). If not available, use cinnamon.

Bake in 375F oven for 20 minutes or until done. Makes 12 muffins.
